Summary

Slow Food Bali is part of the worldwide Slow Food movement, which aims to defend local culinary cultures and healthy, fair and high-quality food. Slow Food Bali supports local producers and encourages Indonesian restaurateurs to source locally.

The context

The Slow Food movement was founded in Italy in 1989 in response to the construction of a McDonald's in Rome's historic centre. The movement defends the preservation of local food traditions and aims to combat the general loss of interest in the food we eat in our societies. Slow Food calls for a genuine reflection on the origin of our products, their taste and the impact of our food choices on the world around us.

Today, Slow Food has more than 100,000 members. Local groups have been formed in over 150 countries to defend local culinary cultures and healthy, fair and high-quality food.

Slow Food Bali was founded in 2013 to bring the values of the global movement to Indonesia through a variety of projects.

One project

A Slow Food label for restaurateurs

Slow Food Bali supports local producers and encourages restaurateurs to source locally through a label. The local group awards a 'Snail of Approval' to recognise the efforts of restaurants that follow Slow Food's guidelines:

  • At least 75% of the menu must use ingredients produced in Indonesia. Waste management must be sustainable.
  • Wages paid to workers must be fair and equitable.
    Restaurants and food producers that respect these principles receive a sticker for their shop window and become part of the Slow Food network.

The Ancut Garden project

The local Slow Food Bali group also runs the Ancut Garden project, a vegetable garden using permaculture principles to produce sustainable food, as well as educational programmes integrated into the community.

In 2018, Ancut Garden became the site of local NGO Emas Hitam Indonesia, which enabled the development of this fertile land, financially supporting the project via grants and a successful crowdfunding campaign.

Le Slow Food Youth Network

Finally, in 2019, Slow Food Bali has set up the Slow Food Youth Network. The network brings together ordinary food lovers, chefs, activists, students and producers to hold public debates on topical issues. The Slow Food Youth Network introduces young people to the world of gastronomy, while raising their awareness of sustainable food issues.
