Résurrection : Crackers made of beer malt

Context

Make 1000 litres of real good craft beer, that's good! But throw away 300 kg of malt*, it's a waste! It was during an internship in a micro-brewery in Paris that the two co-founders discovered the tragic ending of malt after the brewing phase. Why is this cereal rich in fibre, vitamin B, selenium, phosphorus, iron, zinc, copper and magnesium and which, moreover, gives off a delicious scent of toasted bread, found in the bin?

* Residues of cereals obtained during the manufacture of beer.

Project

Implementation

That is how Résurrection was born. They make crackers made from brewery grain residues and they are engaged in an organic, local, circular and artisanal approach. Résurrection is the story of a virtuous social company born in Île-de-France and quickly deployed in the Nouvelle Aquitaine region.

Micro-breweries open daily in urban areas, so the opportunities are many!

The goal is to create circular channels where nothing goes to waste, especially when it comes to good, healthy and organic products. The toppings of the crackers are all organic: sunflower, fennel, pumpkin, caraway seeds, Perigord nuts...

Means

Resurrection works as much as possible with local producers, and for raw materials from far away, they work with organic suppliers who act favorably for the environment.

Results

With 300 kg of grain residues selected from the brewers, Résurrection produces 400 kg of delicious crackers made within a 100% local products and 100% organic circular process.

The Little Extra

Résurrection is supported by the following partners:

  • Darwin Ecosystem: Résurrection headquarters is installed there; Darwin is an ecosystem/a place dedicated to economic cooperation, ecological transition and social innovation.
  • Zero Waste France: Zero Waste France is an NGO working towards a zero waste society. In 2018, Résurrection collaborated with Zero Waste Paris in the food markets of the city to make Parisians aware of “zero waste” recipes.
  • Synabio: Résurrection is a member of the working group "Jeunes Pousses de la bio" (young actors for organic products), of Synabio (national union of organic products companies).
  • AGIR (“Agro Alimentaire Innovation Recherche”): Résurrection benefits from financial assistance to install their research and development activities and develop their future recipes.
