Context

La Brasérade is therefore a family business, originally created in 1970 under the name “Martin Establishment”, specializing in the cutting and sale of wholesale and semi-wholesale pork,  in the slaughterhouse district of Montpellier. In 1976 the company began to specialize in the manufacture of cured meats (sausage, merguez, chipolata) with the arrival of Guy Dupuis. The brand name “Les Brasérades” was created in 1989.

Project

“We intend to strengthen all of our economic, social and environmental indicators in the medium term before we can develop real projects such as, for example, establishing a company day care centre for children and perhaps one day building a new factory with Haute Qualité Environnement standards », Guy Dupuis, director of Les Brasérades

Les Brasérades has recently offered two new ranges of cold cuts, one organic and one VEGAN;

  • the organic formula : two sausage recipes: one with porcini mushrooms and white wine, one in Languedoc-style,
  • the veggie formula corresponds to two winter recipes, meat-free, allergen-free and soy-free, with natural casing made from seaweed

These cold meats are offered in the specialized department and / or deli section.

Implementation

As a general rule, the products are made only from noble cuts of pork (shoulder, back bacon fat, pork tenderloin, etc.). La Brasérade undertakes to carry out numerous checks throughout the production process, from the reception of raw materials to the shipment of finished products.

In this approach, their quality system is based on the ISO 22000 standard (that is to say: on a voluntary basis, the company must provide the material, human and financial resources to achieve its objectives in terms of food safety standards. Staff must be involved in the process and trained. Training in hygiene and good practices is essential in order to optimize food safety management.

This company is recognized for its fresh meat products and its natural casings. Its particularity comes from its products which are made with ingredients with “flavors of the Mediterranean terroir” essentially (tomato, garlic, basil, chives, sweet pepper, green olives, porcini mushrooms…). Les Brasérades also offers a specific range with less than 15% fat, without coloring, minimum salt level in the products.

Their products are local, revolving around a compass point which is the Pic St Loup. The salt comes from Camargue, the extra virgin olive oil is local and the wine also comes from the region.

The company Les Brasérades is a small, independent family business (SME), which is recognized for its know-how in the manufacture of specialty cold cuts.
“For almost 30 years, the Brasérades have invited the midday sun to tables. "
This company employed 120 people in 2018 and is managed by Guy Dupuis. Les Brasérades is established in two territories, here near Montpellier in the town of Crès and in Lagny-le-sec (60). Their main customers are the supermarkets and hypermarkets.
